Ingredients
BROWNIE CUPCAKES
- 125 g (half block) butter, melted
- 150 g (1 cup) coconut sugar
- 150 g (1 cup) self-raising flour
- ½ tsp vanilla extract
- 20 g (4 ½ tbsp) raw cacao powder
- 2 eggs
- 100 g (1/2 cup) dark chocolate chips
BAT COOKIES
- 150 g (1 ½ cups) spelt flour
- 100 g butter, cut into cubes
- 50 g (1/3 cup) coconut sugar
- 15 g (1/4 cup) raw cacao powder
- 1 egg
Method
BROWNIE CUPCAKES
- Preheat oven and line a muffin tin with cupcake baking cups.
- In a food processor, combine melted butter and sugar for 2 minutes.
- Add all remaining ingredients except chocolate chips and mix for 30 seconds until well combined and smooth.
- Add in chocolate chips and gently mix in by hand before evenly distributing mixture in prepared baking cups. Bake for 12-15 minutes or until a skewer inserted into the centre of a cupcake comes out clean.
- Allow to cool before using a piping bag to decorate with your chosen frosting/butter cream. Set aside.
BAT COOKIES
- Preheat oven to 160 C and line a baking tray with parchment paper.
- Add all ingredients to a high-speed food processor until a dough forms.
- Roll out on parchment paper until about 3 mm thick. Place another sheet of parchment paper on top to cover then transfer dough to the fridge, ensuring it is on a completely flat surface, to chill for 15 minutes.
- Once chilled, use bat cookie cutter to cut out the cookies before placing on baking tray and baking for 15 to 20 minutes or until golden.
- Remove from oven and allow to cool completely
To serve
Place the bat cookies on top of the frosted cupcakes. Serve and enjoy with your little monsters!
